No shortcuts. No artificial colour. Just the slow work of growing, picking, drying and packing on the estate — two monsoons, one harvest, and nothing rushed between soil and seal.
Vines, trees and blossom tended through two monsoons in the Kumari hills — shade, rain and soil doing the quiet work.
Each berry, bud and blade is selected when aroma and colour are at their fullest — never early, never late.

Notes from the kitchen
A few quiet suggestions — crush, warm and finish — so each spice opens fully in your cooking. Small gestures, big flavour.
Black Pepper
Crush just before serving. The heat wakes the oils — perfect for rasam, grilled meats, eggs and a last twist over dal. Whole berries keep their bite far longer than pre-ground.
Cloves
Bloom in ghee or oil at the start of a curry, biryani or chai. Two or three buds are enough — lift them out before serving so the perfume stays, not the bitterness.
Nutmeg
A little transforms milk, spinach, béchamel and festive sweets. Freshly grated is always best — one pass of the grater goes further than you think.
Nutmeg Mace
Steep a blade in warm milk or stock. Its colour and perfume lift desserts and rich gravies — pull it out once the fragrance is clear, before it turns sharp.
